This creamy chicken penne pasta is a delightful combination of tender chicken, flavorful tomato-based sauce, and a rich, creamy white sauce. The dish is perfectly seasoned with a blend of spices, making it a comforting and satisfying meal. It’s an easy recipe that’s perfect for weeknight dinners or when you want to impress your family and friends with a homemade Italian-inspired dish.
Ingredients:
For the Pasta:
- 300g Penne pasta
- Water (as required)
- 1 tsp Salt (or to taste)
- Olive oil
For the Sauce:
- 1-2 tbsp Olive oil
- ½ cup Onion, chopped
- 1-2 tbsp Garlic, chopped
- 200g Chicken, boneless (cut into small pieces)
- ½ cup Capsicum, chopped
- 2-3 tbsp Tomato paste
- 2 tbsp Tomato ketchup
- 1-2 tbsp Chilli garlic sauce
- 1 tsp Salt
- 1 tsp Black pepper powder
- 1 tsp Paprika powder
- 1 tsp Oregano
For the White Sauce:
- 3 tbsp Butter
- 2 tbsp All-purpose flour (Maida)
- 1 ½ cups Milk
- ¼ tsp Salt (or to taste)
- ¼ tsp Black pepper powder
- A pinch of Nutmeg powder
- Mozzarella cheese, grated (for topping)
Method:
1. Cook the Pasta:
- In a large pot, bring water to a boil. Add 1 teaspoon of salt and a drizzle of olive oil.
- Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.
2. Prepare the Chicken Sauce:
- In a pan, heat 1-2 tablespoons of olive oil over medium heat.
- Add the chopped onion and sauté until soft and translucent.
- Add the chopped garlic and cook for another minute until fragrant.
- Add the boneless chicken pieces and cook until the chicken is fully cooked and slightly golden.
- Add the chopped capsicum, tomato paste, tomato ketchup, and chili garlic sauce. Mix well.
- Season with 1 teaspoon of salt, black pepper powder, paprika powder, and oregano. Stir to combine and cook for 2-3 minutes until the sauce thickens and the flavors meld together.
3. Make the White Sauce:
- In a separate pan, melt the butter over medium heat.
- Add the all-purpose flour and whisk continuously to form a smooth roux. Cook for 1-2 minutes to remove the raw flour taste.
- Gradually add the milk, whisking constantly to avoid lumps. Continue to cook until the sauce thickens.
- Season the white sauce with ¼ teaspoon of salt, black pepper powder, and a pinch of nutmeg powder. Mix well.
4. Combine and Serve:
- Add the cooked pasta to the chicken sauce and mix until the pasta is well coated with the sauce.
- Pour the white sauce over the pasta and gently mix to combine everything.
- Transfer the pasta to a serving dish and sprinkle grated mozzarella cheese on top.
- Serve hot, and enjoy your creamy chicken penne pasta!
