This creamy chicken penne pasta is a delightful combination of tender chicken, flavorful tomato-based sauce, and a rich, creamy white sauce. The dish is perfectly seasoned with a blend of spices, making it a comforting and satisfying meal. It’s an easy recipe that’s perfect for weeknight dinners or when you want to impress your family and friends with a homemade Italian-inspired dish.

Ingredients:

For the Pasta:

  • 300g Penne pasta
  • Water (as required)
  • 1 tsp Salt (or to taste)
  • Olive oil

For the Sauce:

  • 1-2 tbsp Olive oil
  • ½ cup Onion, chopped
  • 1-2 tbsp Garlic, chopped
  • 200g Chicken, boneless (cut into small pieces)
  • ½ cup Capsicum, chopped
  • 2-3 tbsp Tomato paste
  • 2 tbsp Tomato ketchup
  • 1-2 tbsp Chilli garlic sauce
  • 1 tsp Salt
  • 1 tsp Black pepper powder
  • 1 tsp Paprika powder
  • 1 tsp Oregano

For the White Sauce:

  • 3 tbsp Butter
  • 2 tbsp All-purpose flour (Maida)
  • 1 ½ cups Milk
  • ¼ tsp Salt (or to taste)
  • ¼ tsp Black pepper powder
  • A pinch of Nutmeg powder
  • Mozzarella cheese, grated (for topping)

Method:

1. Cook the Pasta:

  • In a large pot, bring water to a boil. Add 1 teaspoon of salt and a drizzle of olive oil.
  • Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.

2. Prepare the Chicken Sauce:

  • In a pan, heat 1-2 tablespoons of olive oil over medium heat.
  • Add the chopped onion and sauté until soft and translucent.
  • Add the chopped garlic and cook for another minute until fragrant.
  • Add the boneless chicken pieces and cook until the chicken is fully cooked and slightly golden.
  • Add the chopped capsicum, tomato paste, tomato ketchup, and chili garlic sauce. Mix well.
  • Season with 1 teaspoon of salt, black pepper powder, paprika powder, and oregano. Stir to combine and cook for 2-3 minutes until the sauce thickens and the flavors meld together.

3. Make the White Sauce:

  • In a separate pan, melt the butter over medium heat.
  • Add the all-purpose flour and whisk continuously to form a smooth roux. Cook for 1-2 minutes to remove the raw flour taste.
  • Gradually add the milk, whisking constantly to avoid lumps. Continue to cook until the sauce thickens.
  • Season the white sauce with ¼ teaspoon of salt, black pepper powder, and a pinch of nutmeg powder. Mix well.

4. Combine and Serve:

  • Add the cooked pasta to the chicken sauce and mix until the pasta is well coated with the sauce.
  • Pour the white sauce over the pasta and gently mix to combine everything.
  • Transfer the pasta to a serving dish and sprinkle grated mozzarella cheese on top.
  • Serve hot, and enjoy your creamy chicken penne pasta!
